An expansive and elegant wine, a skilful blend of Chardonnay and Sauvignon Blanc, vines that give a complex and harmonious bouquet, with fruity and floral notes. It is a splendid golden-yellow with bright, coloured reflections, and has an excellently complex nose that ranges from notes of yellow summer fruit, in particular peach and apricot with slightly exotic elements that recall passion fruit, to hints of lily of the valley, sage, cardamom, and lavender that are typical of Sauvignon Blanc. The gentle barrique aging further brings out its bouquet, lending a light vanilla, hazelnut, and caramel spicyness. On the palate it is balanced, with its acidity offset by an excellent softness and creaminess, an acidity that accompanies this blend resulting in an impeccable, persistent finish.
Alcohol: 13,0% vol.
Pairings: ideal with seafood dishes such as shellfish and blue fish, full-flavoured oven-cooked fish, and is also excellent paired with white meats.
Pairing recipes: Grilled brioche croutons with cedar smoked salmon, acacia honey, salted butter, and tarragon, covered with toasted and salted almond crumbs.
