An elegant and aromatic wine with a pleasant minerality, expressed through a skilful blend of typical notes of Manzoni Bianco, and excellently supported by the Pinot Blanc, which adds structure. It has a straw-yellow colour with light greenish reflections – testimony of its freshness and acidity-, a fine nose with floral notes of white rose and hawthorn, as well as notes of ripe white peach, accompanied by pleasant notes of tropical fruit, pineapple in particular. The mineral note typical of Rhine Riesling is perfectly recognizable yet discreet in this interpretation. It expresses freshness, flavour, and is well balanced in the mouth due to its aging and subsequent yearlong maturation in the bottle, which lends complexity.
The finish is fine and persistent, with a clear final sensation of cleanness.
Alcohol: 13,5% vol.
Pairings: it goes perfectly with starters, vegetable and herb-based first courses, particularly risottos – especially in springtime or with the typical asparagus of the area around the Piave from where this wine originates-, and with seafood in general.
Pairing recipes: Sous vide baby octopus, cherry tomato confit, basil, burrata, and crispy wafer.
Chickpea velouté with slow cooked rosemary scented mullet fillet stew and extra virgin olive oil.
Risotto with asparagus tips, cream of asparagus and leek, creamed in salted butter.
Sous vide chicken supreme with avocado and mixed salad, topped with a honey, mustard, and Sorrento lemon sauce.
